This is genuine, high-level sushi craftsmanship. They use local Vietnamese fish, apply traditional techniques, and elevate them into remarkable Japanese sushi. To me, this shows immense respect for local ingredients.\n\nOf course, I respect sushi spots that serve exclusively imported Japanese fish—that requires a different kind of skill and mastery. But as for me, nothing gets me more excited than a place that turns local fish into something so delicious and authentically Japanese.\n\nWhile the fish is vital, the sushi rice (shari) is even more essential. They nail it here—the rice is perfect. Even their non-sushi rice dishes and rice bowls are amazingly tasty and very reasonably priced.\n\nBeing so affordable means I can visit often.
